defaults write com.apple.finder QLEnableTextSelection -bool TRUE; killall Finder

UPDATE:
You could use:

defaults write -g QLEnableTextSelection -bool TRUE

and enable copying text from Quick Look previews within any of your apps, rather than just the Finder. Restarting the given app may still be necessary.
